Typically used in various cultural staples, buckwheat's story for this individual begins unexpectedly at a health food cafe by the beach in Sydney, Australia.

Although buckwheat has been a key ingredient for centuries in dishes like Japan's soba noodles, Ukraine's kasha, and dense pancakes in the U.S., it was unfamiliar to someone raised in an Italian/Irish household in the Midwest. Despite an interest in superfoods as an athlete, buckwheat was not on their radar.

Australians, however, unlocked buckwheat's rich macro- and micro-nutrients, making it crunchy and delicious. They used sprouted and dehydrated seeds as a crunchy topper on an açaí bowl, sparking a newfound appreciation for this ancient grain.
